Banana *Chocolate Chip Muffins

These muffins are out of this world!!! I am in love with Nigella's new cookbook and this recipe was the first I've tried so far. The batch makes 12 big muffins and they are absolutely wonderful. The recipe called for butterscotch OR chocolate chips and since I only had the latter, that was what I used. Oh MY are they yummy. So, you think I like them or what? Enjoy.

Banana *Butterscotch Muffins

1/2 cup vegetable oil
2 eggs
1 2/3 cups flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cups mashed bananas (2-3 ripe bananas)
*1 cup butterscotch OR chocolate OR white chocolate chips

Preheat oven to 400 degrees and line a 12-cup muffin pan with paper liners.
Measure the oil into a large glass measuring cup and beat in the eggs.
Put the flour, sugar, baking powder, and baking soda into a large bowl and mix the liquid ingredients, followed by the mashed bananas.
Fold in the butterscotch chips, then divide equal quantities into the waiting muffin pan and bake in the preheated oven for 20 minutes.

Makes 12.

I tried these with butterscotch and everyone loved them. I'm on my second batch of Mama's Banana Muffins also a hit.
